Sweet Potato Casserole with Pecan Topping

A healthier take on classic sweet potato casserole, topped with crunchy pecans and a touch of honey.
Ingredients
- 3 1/2 pounds sweet potatoes (about 5 medium), peeled and cut into 1-inch chunks
- 1/3 cup honey
- 1 large egg
- 1 teaspoon ground cinnamon
- Cooking spray
- Brown sugar and chopped pecans (for topping)
Instructions
- Preheat oven. Cook sweet potatoes until tender.
- Mash potatoes with honey, egg, and cinnamon.
- Transfer to a greased baking dish. Top with pecans and brown sugar.
- Bake until golden and set.
